The history of the company begins back in 1978, when a pilot carp breeding site was created, where by 1990 breeding volume was 700 tons a year. In 1986, the company started to breed valuable fish species: trout, white salmon, Baltic whitefish and sturgeon starting from 1989, which later became its main product.

Starting from 1996, the company has been in the leading position in the field of commercial sturgeon breeding in Russian market. In 1996, along with the commercial sturgeon breeding, sturgeon brood stocks breeding was chosen as the main strategic direction of the company development to obtain commercial volumes of fish-breeding-productive (intended for further breeding of fish) and high-quality caviar, which was successfully implemented.

In 2006, roe processing shop, equipped in accordance with the latest European standards and in compliance with all Russian requirements was put into operation at the company’s fishery. Industrial production of sturgeon caviar started in December 2006.

Currently, the company is in the leading position in Russia in the areas of commercial sturgeon breeding and production of caviar, obtained from the company’s own brood stocks.



When choosing technology we intentionally abandoned the use of modern closed-loop and half-closed-loop systems, where the fish are always in polluted environment and because of this caviar usually tastes bad. Sturgeon is bred and kept in almost natural conditions. They are kept in running river water – in nurse ponds, outdoor fishponds, as well as in specially built for this purpose rooms with fish tanks. The fish are divided to several categories depending on type, sex and age principle. Every category is kept separately in supreme comfort conditions, without any shortages. The fish are fed special fish feed, which does not contain GH (growth hormone) and GMP (genetically modified products).

The company uses mainly manual labour. All brood stock fish have individual electronic markings, which enables strict individual control and correction of physiological state of every fish at any stage of breeding by providing the best keeping conditions.

Sex determination and the degree of maturation of fish eggs are done by ultrasound diagnostic method without traumatizing the fish. The technology also includes usage of Cherepovets regional hydro-electric power plant cooling pond warm water. That is why caviar can be obtained year-round.

All these allow us to breed, in nearly ideal conditions, our base product – live fish, which are the source for obtaining of highest quality caviar, and our technology allows strict control over all processes at every stage of production – from the moment of fish birth to caviar jar from the fish, which you are holding in your hands.

Our production diagram: breeding the fish – obtaining eggs – processing of eggs for food or fertilization to grow more fish. Fertilization process and sacrament of transformation of eggs to larvae, larvae to fry is carried out in “incubation – larvae” room. Larvae are bred there up to certain size. Then they are transferred to fingerling room and stay there until the moment when are ready to be transferred to the next age group.

During following years the fish are kept in replacement stock, where they are bred until identifying their sex and after that female fish are transferred to replacement brood stock, where they start delivering of roe in 4-6 years. When the first roe is delivered female fish are moved to roe productive brood stock.

Roe, received from these fish, is immediately sent to processing room, where it is salted and packed into sterilized jars.


It is not a secret that the quality of caviar directly depends on the environment, where fish habitats, as well as on breeding technology. Our main resource is water of forest river Suda – exactly because of special quality of water it was decided to breed sturgeon productive brood stock in this river, not anywhere else.
There are no any industrial or agricultural plants upstream – the river gets its energy from numerous northern swaps and lakes, carrying its rapid waters through virgin forests’ shores.

Pressed caviar (payusnaya) has been produced for onboard space food by RTF “Diana” since 2009 in collaboration with a team of expert nutritionists and specialists from “Kasprybtestcenter” that have been dealing with space food in the past. There have been conducted a number of preliminary control tests to ensure caviar can be eaten in space, to confirm shelf life under artificial humidity in International Space Station. Pressed (Payusnaya) caviar is a true delicacy that has high nutritional value. Caviar protein contains many essential amino acids, caviar fat has many polyunsaturated fatty acids. There are a number of various minerals, fat and water soluble vitamins.
As the caviar is a temperature controlled (has to be stored in -1°C up to -5°C temperature) and highly perishable product, hence the direct consumption of it is not recommended in the space while the temperature in the space object that can go over 25°C.

Our numerous efforts and researches to include highly nutritious product into the diet of the astronauts have resulted in the development of a process of producing caviar that can be stored in conditions of increased temperature.
Our specialists from OOO NII and “Kasprybtestcenter” (Astrakhan) have developed a special technology for the production of pressed caviar for special use.

For the production of a product with high stability of storage at elevated temperatures, the principle of partial dehydration has been applied. Raw Caviar was processed with sugar solutions and saturated salt, as the result we got osmotic dehydration to a moisture content of 34% (whereas the traditional technology in caviar is - 40%). By reducing the water activity of the product, we got plasmolysis of microbial cells, thus they lose the ability to spoil the product.
Food production process for astronauts requires a special attention to the quality of the raw materials used, therefore harvesting caviar - raw should be made only from live sturgeon, as well as in terms of security of raw materials must meet the "Hygienic requirements for quality and safety of food raw materials and foodstuffs " ( SanPiN 2.3 .2.560-96 ) .

To improve the reliability and stabilization of the quality and storage of caviar at elevated temperatures, the caviar is pasteurized in a metal tin at a temperature of 60 ° C for 120 min
Based on the conducted researches a technical conditions "Pressed caviar sturgeon pasteurized" special TU 9264-450-47808436-2000 have been developed and agreed upon as well as a production manual.
Production of pressed caviar for onboard consumption of astronauts requires special and stringent sanitary control both during the production as well as the handling of the product.
For this purpose at the astronaut’s food department laboratory NII PP and SPT, product samples of "Pressed sturgeon Caviar " were kept in thermostats to control storage at a temperature of 25 ± 2°C with a short-term rise in temperature to 35 ± 2°C for 2 days and to + 30 ± 2°C for 1 night in accordance with our "Program of reduced (control) tests of products of industrial production with short-term storage to be included in the additional part of the diet of the crew of International Space Station"

The results of our researches showed that the developed technology of pressed sturgeon caviar production allows the storage of the product in the conditions of space objects up to 60 days (including the time for preparation of supply and transport).

Currently RTF Diana continues close cooperation with Birulyovsky Food Experimental Factory and supply astronauts with pressed caviar packed in metal tins.
